Mikey do You cook with lard or coconut oil? Yes.
I don't fry food often due to the higher heat, but when I do, I use either EVOO or lard, not CO.
Most (90%? or +?) of my food is cooked by poaching, so the temp never exceeds boiled water, 100*C/212*F and I'll use any of the three oils in that.Do you do your poaching in urine?

I've given up cacao, or cocoa. Too many oxylates. I now use ghee, coconut oil, and collagen in my coffee, with cinnamon. Oxalic Acid Controversy www.realfoodforlife.com/oxalic-acid-controversy/Benefits and Rebuttals: The other side of the oxalic acid story

A public service message from the Canadian Health Board: Oxalic acid is found in green leafy vegetables, tea, beans, nuts, beets, chocolate, and sweet potatoes. Oxalates can bind to calcium and prevent it from being absorbed, which can lead to kidney stones in some people. To counteract the effects of oxalic acid, it is important to eat and drink calcium and oxalate-rich foods together during a meal. Oxalate & calcium are more likely to bind to one another in the stomach and intestines before the kidneys begin processing, making it less likely that kidney stones will form[1][2][3]. Cooking foods may also lower oxalate content. Oxalates dissolve in water, and some research indicates that boiling vegetables for 12 minutes can lower their oxalate content[2]. Some studies suggest vitamin C can counteract the inhibitory effects of phytates on mineral absorption[4]. Drinking sufficient amounts of water to dilute urine to prevent oxalate collection in the kidneys remains the #1 recommendation[9].
