Of course, and it backs his book sales, etc. There is a lot of research that is both contradictory to his research. And as an Italian, all he has to do is look around his country -- I certainly do when I've been there, -- and see all of the people consuming pasta, bread and beer. Italians don't have the levels of western disease seen here in the US and the only obese or severely overweight people in Italy were predominantly from the US, some from the UK. Longevity expert Valter Longo includes pasta in his dietary recommendations.

At the college where I work, they used to do nice, cheap meals in the dining hall. I regularly enjoyed the £1.50 jacket potato with cheese and beans. The soups with a roll for £1.25 were great in the winter. All the meals were healthy too. We're smack in the middle of Stourbridge and there is a lot of competition from local business; a couple of delis, the chip shop, pizza bar and the supermarkets, but the dining hall did a good trade.
Sadly it has now closed. The opening of a KFC and McDonalds across the road proved too much and we couldn't compete. The local council has a statute that a fast food outlet can't be built with 400m of a school. I've often wondered if money changed hands to allow the two aforementioned places to be built. Our students naturally go there, but we we have to deal with the rubbish. They put pizza boxes in the cardboard recycling bins and the caretakers have to take them out as the cardboard people won't take waste contaminated with food.
I miss the school dinners.

Our buffet in college was heaven several times a week. Enchiladas, refried or charro beans, rice, frito chili pie, tacos. Pretty close...only thing missing are the beans & rice:

What exactly are the symptoms of "Gluten Toxicity" ? I hate to reply to my own question, but since nobody replied, I did a quick search, and I didn't realize how sick I really am until I read the whole list. From my perspective, gluten affects some people, but not everyone.
This reminds me of what an upbeat, positive thinking farmer told me one time. (out here many farmers are known to complain a lot, even when things are going pretty good) He said..."I didn't how bad things were until I went to town for coffee this morning"

If a person is consuming the toxic glutens and has any chronic negative health issues, they would, at least, improve that situation by fully eliminating the toxic glutens. The tricky part is that it's hiding in most packaged foods and even in "health" foods. I found it in the bulk beans bin @ the local health store. It drifts and settles during container transfers in the back room packing area, I suppose. So, the ingestion of these substances could be unknown, even though a person is trying to identify and eliminate this auto-immune trigger group. It took me 5 to 6 years to really find the foods that had no gluten contamination. e.g., I love hot sauce and kept trying different ones until I found a few with no gluten toxicity. They hide it in the general term "spices" to save money and can still claim a product to be "gluten free" if the amount is below a certain gubmnt approved level. Some people don't care enough about their health to sort it all out, although there is lots of help available to do that. It's more convenient to eat the crap and pay the MD. I don't want to spend $ on docs who don't have a fucking clue anyway and I had to eliminate the toxic glutens to survive, apparently. There could be other issues, but eliminating the toxic glutens obsessively and completely will be found to be a big step in the right direction. I know of no one (and I encounter this a lot) who has fully eliminated the toxic glutens for a couple months that did not feel better, even if they had no physical issues and weren't yet taking any drug (which is how MDs handle gluten toxicity and auto-immune inflammatory response symptoms). I've noticed more and more people are discovering the extent to which the toxic gluten grains have brought them excessive inflammation and disease and have had to do what I did, whether they had a savvy doc (yeah, they have no choice @ this point but to wake up and do the right thing) or just figured it out. The use of pesticides and herbicides no doubt also contributes to the problem, but, as the PubMed report shows, those grains are toxic to all humans. The 47 item list above is less than 20% of the symptoms discovered so far that result of inflammation caused by ingestion of the toxic glutens, barley, rye, oats, wheat and spelt. They continue to find more, but the count is now somewhere between 250 and 300 the last time I heard.

Went I was growing up you was suppose to have bread with meat, eating meat on it's own was frowned upon. My family has always eaten bread with all meals, usually rye. I still eat plenty of bread and find nothing harmful about it at all, I also eat pasta and noodles fairly often. To me, this gluten free fad is a load of bollocks. I used to feel the same way and would laugh at people who suggested that it might be helpful to me to eliminate the toxic glutens. Nearly dying persuaded me to give them up to see if it helped. It did.

Two years ago, I spent 10 or 11 days in Paris living in a flat on the west side of the Seine. (Stayed in a flat as it was 1/2 the cost of one week in a hotel.) Anyway, had to go out to the local stores and fruit and vegetable stands for food. While the Uber was wandering throughout the streets to drop me off, I noticed people everywhere with baguettes. Men, women, young and old. Didn't matter. Their beloved baguettes were everywhere. So, after unpacking and checking email I set off and the first thing I passed was a bakery with baguettes in their infamous paper pages and also on display with prosciutto, cheese and some had some vegetables or tomatoes on them. Grabbed the latter for dinner (yum!!!) and the next morning after getting some coffee and fruit at a nearby grocery store, I picked up a fresh baguette (OMG, the smell was amazing with all of that fresh bread) and headed back for breakfast. Wonderful. I'll dig up a picture or two from that trip off the server. And BTW, all of these French with their baguettes? Slim, trim... BTW, anyone who has been to Germany or Switzerland? Pretzel stands everyone -- better get there early because they sell out quickly. Slim, trim Germans and Swiss.
