I always get a kick out of Bruce's post about his dilemmas with foods. So I figured I would share a favorite salad I got from an older lady. She called it a,"Health Salad". Whether You consider it healthy, that's up to You.
1) Bag of kale 2) 4 carrots & small sweet onion chopped 3) Half head chopped red cabbage 4) Sesame seeds 5) Parsley Flakes & black pepper 6) Ground mustard-3 teaspoons 7) Tumeric- 3 teaspoons 8) Lemon juice & olive oil ( same amount) 9) Dried cranberries-chop small 10) Garlic(2 cloves) optional Toss Well
I get the stuff at Trader Joe's. I buy the organic kale that's already chopped, shredded carrots, and the organic mix cabbage already shredded because I'm lazy with meal prep. Something that I prefer instead of the sesame seeds are raw pistachios.

That looks good. I’d add some canned wild Alaskan salmon to that for more protein.

What? No sea salt? Carrots are one of the veggies that release more nutrients when they are cooked. The crucifers, like kale, cabbage, broccoli and the spinach contain oxalic acid. If I eat them, I always steam them first, no matter how they will be eaten, to reduce the oxalic acid significantly to a tolerable level for digestion.

This is my go to salad for lunch at work. I also do add Himalayan salt and pepper. I either eat chicken, turkey or some kind of fish with it. If I'm working extra hard I have some kind of carb with it also.
