Michael,
I eat Mexican, Asian, Italian, Indian, etc. type dishes that are based around legumes and veggies (with an emphasis on greens). I add in grains and nuts and seeds (emphasis on flax and chia and other omega 3 abundant nuts and seeds) to round things out taste and nutrition wise. I eat these dishes at breakfast, lunch or dinner. I also will eat a more traditional breakfast like oatmeal or make some other grain-based cereal concoction with fruit, soy milk, spices, and nuts/seeds. As the weather warms I make smoothies and frozen fruit-based "ice cream". I also eat a lot of fruit.
