What comes to mind when you think of Fasting? Really, let’s do a gut check here… My first thoughts are ‘No Way, I can’t go all day without eating’. Can I be more honest?

If you fast in a way that ensures you know you'll be eating well at some point during the day, it is not so daunting mentally.

Been on short and no rations a few times in the past, as far as I'm concerned, practicing starving or just plain being hungry on purpose is nonsense.
If someone is doing it for religious reasons, he's got a right to his beliefs.

Fasting is about giving up the thing I seek for satisfaction in order to draw near to God… allowing God to satisfy us.

Fasting is about withholding food from your body. You can do it for whatever purpose you desire or need. Certainly, it's been used for thousands of years for spiritual sensitivity, but that's not its only benefit, by far.
My understanding is that, for greatest health benefit, the fast needs to last at least 2.5 days to 3 full days (60 hrs to 72 hrs, min) , drinking water only.

Well, forget about 40 days without food or water, you'll die of dehydration.
My Dad was Ojibwe and several of my kins on that side of the family follow the traditional ways including fasting for different ritual purposes.
I would suggest that you don't go overboard at first and start with one of the easier ways described and see how your body react.
Later you can try something a bit stricter. A lot depend on you physical condition at the start of the fast, harming yourself is not the aim of any such practices.
Avoid strict fasting for more than one or a couple of days if you have any kind of serious Health issue.
