Not only did I acquire a taste for smoked salmon during my years in New York, but also for Italian dry salami. Links of this stuff hangs over counters in New York delis. Not the healthiest thing in the world, but I loved it.
For some reason, here in small town Kansas, they just don't have the same thing. However, there is Oscar Meyer sandwich hard salami in slices. It's actually pretty good. But, it is soooo fatty! I came up with something. I lay the slices out on a baking sheet and bake them at 375 degrees for 10 minutes. This bakes the fat and the grease right out of them, and then I place them between paper towels and pat the grease off of them. The result is a delicious, slightly crunchy snack. Goes great with crackers and cheese, and they even make a great BLT substitute.
