I’ve been making a paleo version recently using cassava flour, makes for a slightly crisp texture. Not sure how truly healthy they are, but they are delicious

I make 'muffin-in-a-cup' using almond or coconut flour. Plus, 1 egg, applesauce or smashed blueberries in place of oil, cinnamon, pinch sea salt and baking soda. Microwave for about 1:10 min. Top with maple syrup or honey. Same mix can be used for pancakes.

As I write this , I’m having , a Fuji apple, 4 scrambled eggs, 4 strips of bacon, coffee, and to top it off a thick buttermilk pancake with organic maple syrup, this is my breakfast every Sunday. It’s a beautiful thing, thanks for posting your pancake Pierini.

I'm not a big pancake eater. But I can appreciate Your family ritual. If I do eat them I make them as Mr.P describes. I may top mine with either sugar-free syrup or peanut butter and a banana.

Growing up in a strict Catholic family, it was pancakes or fish every Friday. I resumed the Friday pancakes almost 30 years ago.

Growing up in a strict Catholic family, it was pancakes or fish every Friday. I resumed the Friday pancakes almost 30 years ago. Forgot about Fish Sticks Friday. Haven’t eaten them, it seems, in a hundred years.
