Potatoes are about the only starchy food I can eat. I don't like the other starchy vegetables like sweet potatoes, parsnips etc. Cereal grains are another starchy food but I don't get on well with them at all and some of them I am allergic to. I can eat well cooked potatoes but can not tolerate them cold. I have no problem with how they taste cold. I just don't digest them well. I have read that when they are well cooked the starches turn to sugars but when they cool the sugars turn back into starches. I could possibly keep adding small amounts of cold potatoes and increasing the amount now and again to build up the enzymes to break down the starch in potatoes as I used to eat them many years ago but I really don't have the interest in cold potatoes.

I love shredded potatoes (typically frozen) cooking them in large pan with a teaspoon of oil spread evenly and making hash browns. Dump Tabasco or salsa on there and a quick, easy filling meal -- but I will typically make a few egg whites and fold them in. Another is vegan gravy -- onions, some Bragg's amino acids and a small amount of flour -- on an oven baked potato.

Well, I'm inspired! I have informed my wife that for tonight's dinner I will be making us loaded baked potatoes with broccoli and uncured bacon bits. yum. yum.
