That looks good but wrong season for me to be having soup. Umpteen years ago, I had a chapter in my life where I got into making homemade soups. Minestrone soup was one in my rotation. Very time consuming but great at the end. I would make my own vegetable broth which was very time consuming but delicious. Era squisito!
