100%. It's not often that I agree with everything someone says in a video, but I do on this. Even to using water (or juicy veggies, etc) instead of oils. I cook heart and liver in the crock pot, usually for three days while I eat out of it and then freeze leftovers. I think crock potting it might help his toughness issue on the heart.

It's hard to find quality organ meats where I'm at. That's one of the reasons I like to take Desiccated liver. I may have found a place that I will be checking out but it's about a 30-minute ride. I actually like liver, not sure I ever ate beef hearts. As a kid, we did eat chicken hearts. , but they were always fried. I'm actually seeing more that some of Jason's diet approach seems to work pretty well for me.

I haven't watched the video yet. Let me guess. He maintained the same gross calories while reducing his calories from carbs and/or fat and increasing his calories from protein, thus reducing his net calories? Perhaps drinking more 0 calories from water?
OK, I watch it now.

Something I didn't hear him mention was to also maintain the same ~ level of activity.

Part of the problem, IMO, is that we grew up in school PE class conditioning, 'one-size-fits-all', all doing the same thing, in the same way, at a programmed chunk of time of day and were told what was the acceptable criteria for our performance. Then we carry that throughout our lives and into the gym-bro environment as if it is the "right" way to do it. It's BS. People need to somehow develop the knowledge of what works best for their individual needs to bring the results they would like to have. When an exercise comes to my attention that I think I might like, I give it a try. If I like doing it, I might continue doing it or maybe find a variation or modification that I enjoy.
I follow the path of enjoyment. I like a comfortable feeling of mild muscle fatigue. There are many exercises that I don't do, sometimes because I'm unable to do them or to do them comfortably due to my body mechanics (as Chandu pointed out some time ago in his excellent posts on that subject) or whatever, sometimes just because I don't enjoy them and there are some I actually hate (like burpees). To each his own. We are not diminished in any way simply due to disliking or not being able to do something someone else enjoys.
I think those who are interested in beginning to do strength/muscle building exercise would do well to listen to Jason. As with Pete Wagner, Matt Schifferle, Steve Justa and others, I like his philosophy of what he's doing. It may be the most important thing about developing ones exercise activity.
It's possible that one of the things that hold people back from beginning an exercise journey is that their mind has been filled with other people's notions of what a good program is when they would be better served to start with one simple thing and just begin, then add to it as they go. They don't need to do everything from the start. Just get moving, be open to try new things and inertia will take over.

The company that he recommends without reservation, 'Ancestral Supplements', is the same company that I recommended to you in the other thread when you asked me about the brand of "bone marrow" and "dessicated liver" pills that I take.... The stuff absolutely works, there's no question as far as I'm concerned

Again, this guy use partial blood occlusion in muscles to increase the effectiveness of training. There is some similarity between his performance and self-resistance with constant keeping high muscle tension through the set.
