How do you do it without breaking the yolks?

The same way anyone cracks an egg into a skillet without breaking the yolks. Get thee an egg, a table knife, and a skillet, and do it.

I avoid fried foods. I like my yolks whole, soft and runny.

OK, I'll give it a shot and report, but if I break the yolk on the knife, you're gonna pay, oh yes my friend, you will pay dearly!

Just to be clear, this process requires the ability to open a cracked egg with one hand.

OMG. You hold the egg in one hand and crack it over the knife, and then you deftly spread the egg shell halves apart using thumb and forefinger.
Oh, wait a minute. Thank God for Youtube:
NOTE: At 1:50, an egg is cracked on the side of a bowl leaving egg running down the side of the bowl. That's why we crack an egg over a knife directly into the skillet!

Um, at 1:50 the video is over. Oh, OK then. I always crack the egg cleanly on the edge of the dish in which the egg will cook - same dish I eat the egg from. No knives to wash. No egg on the edge of the dish. Probably because "deftly" is my middle name - and the fact that I'm superhuman helps, of course.

Dam I think I missed that one! Was it a raw egg or a boiled one? Oh! Well, allow me to enrich your life! To crack an egg into a skillet, hold a table knife down at an angle into the skillet with the point held against the skillet and the blade side up. Crack your egg over the blade. You get a nice, clean crack with no shattered egg shells, and all of the egg gets into the skillet! Thank you I will now be able to sleep easier knowing this.
