The starch-based solutions way of eating advocated by Dr. John McDougall appeals to me. He doesn’t use the vegan word to describe it but it practically is.
The YouTube channel of High Carb Hannah is a good place for appealing vegan menu ideas.
My approach now is to just plain and simple eat less. I do find myself eating less meat but will always like and eat a good hamburger, steak, bacon and baby back BBQ ribs.

My childhood memories living in Salford UK slums, playing cricket just like these lads or football (soccer) against a brick wall like across the street in the photo (not my photo but is Salford 1962/3). I did smoke Park Drive plain cigs as well and used Cherry Blossom shoe polish.
I was stationed in Suffolk, England from 1970-1972 with the USAF......really liked it there

..... went to a Veg Fest I had a vegie Jahmaican patty there and it was horrible, the pastry wasn't flaky but like dry, thick and stodgy. Processed food is still processed food, no matter if "vegan" or whatever. The factories making "vegan" processed food are just trying to make a buck off of the vegan fad. Same goes for factories making processed "gluten free" product. They are trying to create a marketing image. It has nothing to do with how healthy the substances actually are for us.

Fast food is very effective at preventing hyponatremia (sodium depletion), a severe condition that leads to a loss of energy, irritability, confusion, cramps, and even seizures. There are at least 1,000 times more athletes who consume fast food regularly than there are successful vegan athletes. So clearly, fast food is the best way to go. See how easy this argument is? Of course, it's a load of crap. Fast food isn't optimal for athletes (or anybody). I should do a documentary called, "The REAL Game Changers" and show how fast food is superior for athletic performance. I wouldn't have any problems finding a sponsor! Of course, trying to convince you that fast food is not only acceptable, but recommended for athletes, is idiotic. But that's what cherry-picking does. It allows you to, very convincingly, present an option as superior."

I'm still in contact with a nutritionist that helped me out so much with some horrible health problems I was having in my early 40's (belly aches, lower back aches and low energy which were all fixed with diet). We email each other jokes now and again. I asked her how she is doing at the moment. I did not mention anything about vegans or meat eating but she felt the need to tell me this as she is so frustrated with how things are going.

Bruv, Planning and preparing a vegan or vegetarian diet just isn't that hard. Open mouth, put in food, see how you feel. Manipulate macros and micros and amount inserted if not getting the desired results. The end. I am glad your nutritionist friend was able to help you with your health problems, but if she was eating a vegetarian diet "and prepared each meal very carefully and well" and didn't have "a bowel movement for the whole year!!", and was "fat and spotty, tired" then she has no idea what she is doing. Here is the simple cure for her lack of results...Push yourself away from the table a little sooner, cut down on the cheese, and mix in some fiber. Also, take a walk every once in a while if you are getting fat. Of course, since I haven't had animal protein for longer than those teenage girls have been alive, and have never had, "chefs/nutritionists controlling every morsel" I have probably lost the "the ability to rationalize", so...
